- Bailey Rae’s Cajun Seasoning
- Olive Oil or Butter
- Garlic Powder
- Onion Powder
- Paprika
- Italian Seasoning

- Fresh Thyme
- Salt
- Black Pepper

How to Make Roasted Herb Chicken
Start by preheating your oven to 400°F. Clean and pat dry your Cornish hens, then rub them generously with olive oil or butter so the seasoning sticks well and the skin roasts beautifully golden brown.
Season the chicken generously with Bailey Rae’s Cajun seasoning, garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper. Don’t be afraid to really season your food because that’s where all the flavor comes from.
Next, stuff the inside of each chicken with fresh rosemary, thyme, and onion pieces. This helps flavor the chicken from the inside while it roasts and gives the entire dish that cozy herb aroma that fills the kitchen.
Place your potatoes, carrots, and onions around the chicken in the roasting pan. Drizzle them lightly with olive oil and season them with a little salt, pepper, and Italian seasoning.
Roast everything in the oven until the chicken is golden brown and juicy and the vegetables are tender and flavorful. Once it’s done cooking, let the chicken rest for several minutes before serving so all those juices and flavors settle in perfectly.
